For the twelfth year running, Gault&Millau touched down at Tomorrowland to put the culinary offering under the microscope. Over two weekends, the guide's inspectors tasted and rated the festival's dishes as part of their Festival Analyses. Afterwards, the best food stands were crowned with a highly coveted award. The Consciencia theme thoroughly delighted the Gault&Millau team.

Red Curry Croquette Thai food – River Kwai
We've known River Kwai for 40 years for their authentic dishes. Once a restaurant, today an event caterer. For Papillon, they developed Thai croquettes with Gastronello. A direct nod to Tomorrowland's expansion into Thailand. The result is sublime: croquettes that perfectly capture the dish's authentic flavour. Both the Thai red curry with chicken and the pad kra pao are delicious apéro bites that pair perfectly with Papillon's exclusive wines and cocktails. The croquette filled with a red curry chicken preparation, with its thin crust, impressed with its long finish, well-balanced spiciness and finesse.

Latin America Hot Dog - PAN
The food offering at Tomorrowland is overwhelmingly diverse: from fries, burgers and pizza to pastas, vegan dishes and Asian-inspired street food. Every dish is presented with great care. The range of burgers on offer was impressive. From classic crispy buns to soft brioche buns or smashed burgers, and from beef, chicken, pork or even vegan: there was a fitting option for every taste. Close to the Moose Bar behind the main stage, the Latin American Sandwiches selection from PAN stood out in particular. Not only with their Sloppy Joe Burger, but also their Latin American hot dog version: a perfectly grilled, juicy pork sausage in a soft bun packed with flavour. The whole was given contrast by fresh onion, coriander and pickled cabbage. Chipotle mayo and chimichurri provided the perfect intensity. This dish scored consistently throughout both weekends, and the wonderfully warm and friendly service completed the experience.

Onigiri spicy tuna & sesame chicken - Onigo
These Onigiri from Onigo — new at Dreamville - had us convinced from the first bite. The triangular, filled rice balls were lightly salted and served with a variety of fillings. For extra bite, they were wrapped in a strip of nori seaweed, making them the perfect fingerfood to sample at Dreamville's food market. Our favourites: the spicy tuna and chicken sesame.
The most flavourful vegan dish of the festival.
Korean fried oyster mushrooms – Ponyhof/Wussler
At the Gourmet Veggies stand in Papillon, vegan enthusiasts are treated to a high standard every year. Fermented fries or a plate of fresh tomatoes in various textures and varieties had already gone down a treat. With their oyster mushrooms, the Ponyhof team raised the bar yet another notch this year: a vegan take on the well-known "Korean fried chicken", here made with oyster mushrooms. A plate of large-format oyster mushrooms, coated in a pleasant rice flour batter, was fried to a satisfying crunch. Cucumber and pickled red onion brought freshness alongside the vegan yoghurt dip. A thick, sticky gochujang sauce added kick without overdoing it, and the accompanying bread was baked to a crisp finish.

Tomorrowland-waffle with chocolate topping – Tomorrowland Kitchen
New to the festival last year, and a bullseye once again this year. That's why we're awarding this haute cuisine waffle for the second year running. This beautifully shaped waffle was THE sweet temptation of the weekend. As the waffle nation par excellence, Belgium naturally had to shine at Tomorrowland, and it did so brilliantly. The Brussels waffle in a butterfly shape, a nod to the Papillon theme, was freshly baked with a soft texture and a crisp crust. The chocolate butterfly design was gently warmed before serving. As an extra touch this year, it also came with a small plate in recycled material, made in the same shape.
